Even in a movie about a stage show rehearsing the dancers 4/4 tempo. The choreographer usually says from the top 5678. Why not 1234. The same happens in ballroom dancing. 5678

Lots of choreography is done in 8-count sections. An American tango basic is an 8-count pattern. Besides, I think it's a widespread convention. If you start counting the prep with 5, it's clear it'a a prep, not the beginning of the pattern.
