Formal Christmas Ball

I am a DJ, and have been asked to host and announce for a Formal Christmas Ball inside a virtual world, known as Second Life. The community in question takes their dancing and balls quite seriously, and while I do have a good library and knowledge of classical music, Formal Balls are well outside my experince range. I am looking for tips and resources for the conducting of the ball, format for the dances, which are typically "dance card" where the lady and gentleman have agreed in andvance upon which of several dances they will be doing, and who will dance with whom. Any help would be greatly appreciated. I am hoping that I can make this event both fun and lively, while keeping it within proper format and tradition. The era this community is set in is the late Victorian, however music from any era will work. I'm working on Christmas waltz and related music that fit both the ballroom dance and Yule theme. Here is a website I used to prepare for a "Viennese Ball." There is a wealth of links inside that tell all about cottilions, ettiquette, dance cards, and so forth. I found it invaluable.
