1. Does anybody have any ideas about the phrasing and musicality of the 5 Latin dances?

2. Could we break or deviate from the usual phrasing?

The reason there are no replies ( probably ) is that trying to teach phrasing thru the written word, is akin to teaching Piano over the phone.

The simple explanation of bar sequence( 4s.. 8s, 16s) is not the answer to your Q.

I would suggest you find a competant teacher who gives classes ( or Private ) covering that topic .
