The understanding I've always had is that the term "milonga" refers to either a specific tango style done to a particular type of music, or a dance event--a dance party featuring the different types of argentine tango. Tango is danced at "salons." So, I don't know that using milonga in the way you're proposing would be entirely appropriate, but I'm sure there are more knowledgable people than me out there when it comes to argentine tango. Is this going to be a studio/dance hall for all types of ballroom? If so, calling it a Milonga would probably make it sound like a tango salon.
